Recipe: Green Pepper Scramble

Ingredients:

  • 5 eggs
  • 1/2 cup non-dairy creamer
  • 1/8 teaspoon pepper
  • 1/8 teaspoon oregano
  • 1 cup green pepper, chopped
  • 1 cup onion, chopped

Directions:

Lightly beat eggs, non-dairy creamer and seasonings. Melt butter in skillet. Pour in eggs and cook until slightly thickened. Add vegetables. Stir and scrape mixture from bottom and sides of pan. Serve immediately with a dash of parsley or paprika.
