Recipe: Pineapple Coconut Macadamia Muffins

Ingredients:

  • 1 cup pineapple chunks
  • 2 cups self-rising flour
  • ½ cup sugar
  • 2 tsp. baking powder
  • 1 egg
  • ¼ cup vegetable oil
  • 1 cup milk
  • ¼ cup macadamia nuts
  • 3 Tbsp. coconut flakes

Directions:

  1. Preheat oven to 400° F.
  2. Lightly whisk together egg, sugar, milk and oil. Add pineapple, nuts and coconut. Stir in flour and baking powder until well blended. Lightly grease a muffin pan and fill ¾ of each cavity with batter. Bake 20–25 minutes. Let cool 5 minutes; serve warm.
