Recipe: Empanadas

Ingredients:

  • ½ lb. lean ground beef
  • ½ tomato, chopped
  • ¼ c. onion, chopped
  • 6 zucchini, sliced
  • ½ tsp. freshly ground black pepper
  • 2 c. flour
  • ¼ c. cooking oil
  • ½ c. ice cold water

Directions:

Preheat oven to 300° F.

Sauté ground beef, tomato, onion, zucchini and pepper, then set aside. Mix flour and oil, and add ice water a little at a time until mixture is moist. Let stand for 30 minutes. Divide dough into 12 balls or patties and roll each piece into a tortilla. Fill each tortilla with ground beef mixture. Fold over and seal edges with water. Bake 40 minutes.
