Recipe: French Onion Soup

  • 4 large red onions, sliced
  • 1 Tbsp. butter
  • 2 Tbsp. cognac
  • 4 cups roasted vegetable stock
  • 4 large croutons, made from low-sodium bread


Melt butter in a soup pot. Add red onion slices and cook over medium heat until the onions are tender and dark in color, stirring occasionally. This can take up to 15 minutes. Add cognac and cook for 2 minutes. Add vegetable stock and bring to a simmer. Let simmer 15 minutes. Divide evenly between four soup bowls and place one low-sodium crouton on top of the soup. Serve immediately.
