Chilled chicken salad with celery, green onion, sweet pickle and fennel. Serve on low-sodium crackers, a bed of lettuce or sandwich bread.

Ingredients:

  • 1 c. cooked chicken, chopped
  • 1/4 c. celery, chopped
  • 2 Tbsp. green onion, sliced
  • 3 Tbsp. mayonnaise
  • 1 tsp. sweet pickle, chopped
  • 1/8 tsp. ground fennel
  • 1/4 tsp. granulated garlic
  • 1/4 tsp. salt (optional)
  • 1/4 tsp. black pepper

Directions:

Mix all ingredients together in a bowl. Chill and serve.
