
Recipe: Steak Chili

Ingredients:
- 2 1/2 lb. beef round steak, cubed
- 1 clove garlic, minced
- 3 Tbsp. cooking oil
- 1 1/2 c. unsalted beef brown stock (or a little more if necessary)
- 2 tsp. dried oregano, crushed
- 2 tsp. sugar
- 1 – 2 tsp. cumin seed, crushed
- 2 bay leaves
- 1/2 of 4-oz. can green chili peppers, chopped, seeded and mashed
- 2 Tbsp. cornmeal
Directions:
In a large skillet, brown beef cubes and garlic in hot oil; drain off excess fat. Add beef stock, oregano, sugar, cumin and bay leaves. Reduce heat and simmer until meat is tender, about 1 1/2 hours. Stir in the chili peppers and the cornmeal. Simmer 30 minutes, stirring occasionally. Remove bay leaves.
Great served with homemade cornbread or macaroni, cooked without salt.
